Spring onions are a flavour essential in Caribbean cooking — used in green seasoning, jerk pastes, stew bases, rice and peas, and countless Caribbean dishes where the mild oniony flavour is wanted without the heavier sweetness of brown onion. Chop the entire stalk (white and green) and add to the pot at the start of cooking. Particularly important in Trinidadian green seasoning paste, where spring onion is one of the foundation herbs. Sold by the single bunch. Keep in the fridge wrapped in a damp cloth for the longest freshness.
