For classic rice and peas, sauté onion, garlic, thyme, and scotch bonnet in oil, add the gungo peas with their liquid, coconut milk, and rice, then simmer covered until tender. For gungo peas soup, add to a pot of stock with pumpkin, dumplings, and salted meat. For a vegetarian stew, combine with plantain, callaloo, and Caribbean seasoning.
