Jelly coconuts are young coconuts with soft, jelly-like flesh and plenty of sweet coconut water inside — quite different in character from the firmer-fleshed mature dried coconut. The Caribbean tradition: chop or pierce the top, drink the coconut water straight from the shell, then scoop out the soft white jelly flesh with a spoon. Particularly refreshing on a hot day.
