Salt Mackerel with Head is a traditional Caribbean fish product used in hearty stews, rice dishes, and rundowns. The whole fish, including the head, delivers a deeper, more concentrated flavour than headless or filleted mackerel — particularly important in Caribbean rundown (a coconut-milk-and-fish stew), where the head adds richness to the gravy. Soak overnight in cold water to draw out the salt before cooking. The 250g pack is the everyday family size. Particularly important in Jamaican mackerel rundown — one of the traditional Caribbean breakfast dishes — and in mackerel-and-bananas suppers.
