Caribbean pumpkin (also known as calabaza) has a sweet, dense, deeply orange flesh — different in character from American Halloween pumpkins or sweeter UK butternut squash. Particularly important in Caribbean pumpkin soup (a Saturday-soup classic), pumpkin rice, traditional pumpkin punch, and savoury Caribbean stews. The 1kg portion contains enough for a family soup or several side dishes. Peel, deseed, and cube; cook until tender to a knife. Caribbean pumpkin holds its shape well in soups while still becoming silky when blended.
